Ralph Schelling –the name definitely rings a bell with Swiss top gastronomers and some celebrities, too... During a cup of espresso the young chef talks about his early days in the trade, he shows us his personal hotspots in Zurich and tells us about a recipe that is guaranteed to always come out well.

It’s still rather early in the morning when Ralph pedals around the corner on his bike. For an early riser and chef this is the perfect time to get fresh produce at the weekly market for his cooking class the same evening. Ralph prefers fresh, seasonal, and local produce:“I want all my dishes to have that touch of freshness. And I’m lucky tobe able to work in the most beautiful places and that I always have some organic Amalfi lemons at home that I bring back from my travels.” 

On today’s menu there are gnocchi, one of his favourite dishes:“Mealy potatoes go in the oven for an hour at 180°C, skin on. Then they’ve got the perfect consistency and a wonderful roasted flavour. Add egg and flour–and never salt the dough!-and boil in very salty water. Add fresh tomatoes and you’re done!"

Lotti from Monday 9am until Saturday 11pm. The restaurant is perfect for a lunch with colleagues or a dinner with loved ones. Both, the daytime and the evening menu, contain dishes that are kept small on purpose. It is recommended that you order 2-3 different dishes. That way you get to try several of the culinary delights without going hungry.
